Jet Tila is celebrated for his culinary expertise in Thai cooking and beyond. From battling the legendary Masaharu Morimoto on Iron Chef America to opening Encore Hotel in Las Vegas and guiding Anthony Bourdain through many markets and restaurants, Jet's food and knowledge reaches millions of people every hear. The Three Dishes Chef Jet Tila Craves Most in Los Angeles
When they came to Los Angeles in 1966, Jet Tila’s Thai Chinese parents gave birth to seminal Asian restaurants and markets: the trailblazing Thai grocery store Bangkok Market in 1972, and Royal Thai restaurant, which opened in 1978.
He learned ancient Asian cooking traditions from his Cantonese grandmother and a French culinary framework from attending Le Cordon Bleu, followed by studies at the California Sushi Academy. Tila’s Thai and Chinese-leaning cuisine reflects the influence of the L.A. neighborhoods in which he grew up, between Thai Town, Chinatown, Koreatown and Little Tokyo.

World’s Longest California Roll
Jet set the record in 2017 with the help of over 300 students of Purchase College in New York. Their rainbow coloured mega maki required approximately 500 cups of vinegared rice, 800 sheets of nori paper, 125 avocados and 200 pounds of surimi, and an unknown quantity of fish paste. The previous year, Jet worked with students to roll a 50 ft California roll, springing the idea to go for the world record.
